How to grow: Romanesco is grown like broccoli and rewards a little patience. Sow seeds about 1 cm deep, either into trays to transplant or directly where they are to grow. It does best planted through late summer and autumn for a cool-season harvest, and prefers a sunny spot with rich, firm, well-drained soil. Keep the soil consistently moist and feed well, as it is a hungry crop and steady growth gives the best heads. Seeds germinate in one to two weeks. Space plants around 50 to 60 cm apart, as the plants grow large. Harvest the central spiralled head while the buds are still tight. Good companions include dill and onion, which help deter cabbage pests.
