How to grow: Spinach is a fast, rewarding cool-season crop. Sow seeds about 1 to 2 cm deep directly where they are to grow, as it doesn't love being transplanted. It does best in the cooler months of autumn, winter and early spring, and prefers a spot with full sun to part shade and rich, moisture-retentive soil. Warm weather makes spinach bolt to seed, so avoid sowing in the heat of summer. Keep the soil consistently moist and feed for lush leaf growth. Seeds germinate in one to two weeks. Thin or space plants to around 15 to 20 cm apart, and harvest by picking the outer leaves as a cut-and-come-again crop. Good companions include strawberries and lettuce.
